2020 Chardonnay
BLEND | 100% Chardonnay
VINEYARDS | Since 2013, Bondar has made their Chardonnay from the same single-vineyard site, the Rathmine Vineyard near Echunga. A beautiful vineyard, shaped like an amphitheatre, with east facing, Bernard clone vines on shallow clay loam riddled with limey rocks, on a limestone base.
WINEMAKING | Hand-picked in the cool of first morning, whole bunch pressed direct to barrel, and fermented naturally in French oak barrels (25% new) and ceramic egg. Some parcels were allowed to undergo malolactic naturally until the balance of acidity was right, but no lees stirring. Aged 10 m onths in oak until January before being blended and bottled in February.
TASTING NOTES |
Orange blossom, nectarine, and white peach are well ripened in the wine, which also has a pleasant acidity and citrus flavor in its core. This perfectly captures the finesse, composure, and intensity of top-tier Australian Chardonnay.
